Recipes For Lean Times - Hash De Luxe

Here are secrets to success with hash: Add 2 to 3 ounces of raw chopped meat, such as bacon or liver, first fried in drippings in which a sliced onion has been cooked. Add the previously cooked chopped meat and cook only long enough to heat.

Occasionally substitute tomato juice, diluted ketchup, canned soup or other liquid to moisten the hash.

Use carrots instead of potatoes.

Or make the dish entirely of meat, thickening it if necessary.

Serve on buttered toast, as shortcake on hot biscuits, or in a casserole topped with mashed potatoes, or with buttered bread crumbs with cheese. Or bake in tomato, green pepper or onion cases.

Hash is also good served on fried slices of eggplant
