Recipes For Lean Times - Meat Loaf

The almost endless variety of meat loaves are delicious hot and cold ( the cold ones slice more easily ). For a crusty loaf, shape the meat and bake in a shallow pan. A moister loaf is made by cooking in a loaf pan, which may be lined with heavy waxed paper, leaving the edges sticking out above the loaf to facilitate the removal of the loaf from the pan. Dressing can be baked between layers of the ground meat. Tomato, mushroom, vegetable or other canned soup can be used for basting any meat loaf, or place strips of bacon over the top. Below is a simple recipe for lean times.



1, slightly beaten egg

3/4 cup of milk

1 cup of dried bread crumbs

2 pounds of ground beef

2 tablespoons of finely chopped onion

2 teaspoons of salt

1/4 teaspoon of pepper

1/4 cup of ketchup or chili sauce



Combine egg and milk; add bread crumbs and soak for 10 minutes.



Add beef, onion, salt and pepper; mix lightly. Do not pack.



Place in a loaf pan or shape into a loaf on a shallow baking pan. Spread ketchup or chili sauce on top.



Bake in a moderate oven ( 350 deg. F. ) for about 1 hour.



Final Note: Ground pork may be substituted for part of the beef - not more than half; or use equal amounts of beef, pork and veal. Tomato juice may be substituted for milk; or for a drier loaf reduce or omit the liquid. In a loaf that will be served cold, hard cooked eggs, olives and pickles can be added.

Here are secrets to success with hash: Add 2 to 3 ounces of raw chopped meat, such as bacon or liver, first fried in drippings in which a sliced onion has been cooked. Add the previously cooked chopped meat and cook only long enough to heat.

Occasionally substitute tomato juice, diluted ketchup, canned soup or other liquid to moisten the hash.

Use carrots instead of potatoes.

Or make the dish entirely of meat, thickening it if necessary.

Recipes For Lean Times

Lean times have definitly hit my household, as well as yours, most likely. Laid off on the last day of the year, followed by a heart attack eleven days later, I spent nine days thinking about how am I going to take care of my family. Of course God, in His word, told me He'd take care of everything! In that, I was reminded that I've been cooking for a long time. What have I done in the past when things were lean? I MADE HOBO STEW! I'll explain all about Hobo Stew and where it comes from in future blogs, and give you great tasting, family pleasing recipes that I've made and tested with my family. ( That sounds cruel, I know. They trust me. That's pretty cool, huh?)

In the fridge I found some left over corn. About one and half cups worth. Maybe two. Two hamburger patties that I chopped into small bits. {The patties were from the other night's barbeque.} About two and a half to three cups of mashed potatoes. Put it all in a micro- wavable casarole dish { bowl or what have you } and nuke {microwave, cook} for about a buck and a half. {1min. 30 sec.} Stir and serve.
